Meat Loaf
2 eggs
3/4 cup soymilk
1/2- 3/4 cup dry oatmeal
3 T finely chopped onion
2 T snipped parsley
1 t salt
1/2 t ground sage
1/4 t black pepper
2 lbs ground beef (low fat content)
1/2 cup ketchup
4 T brown sugar
2 t dry mustard
Preheat oven to 350 degrees. Combine eggs and soymilk, stir in oatmeal, onion, parsley, salt, sage, and pepper. Add beef. Pat into several loaf shapes in 9x13 dish. Bake for 45 minutes to 1 hour. Spoon off excess fat. Combine ketchup, sugar and mustard; spread over meat (save some for serving). Continue to bake for 5-10 minutes until cooked through.
Porcupine Meatballs
1 egg beaten
1/2 t salt
1/4 t pepper
10 oz condensed tomato soup (check soup label!)
1/4 cup long grain rice
1 lb ground beef
2 T finely chopped onion
1 T snipped parsley
1 t Worcestershire sauce
Combine egg, 1/4 cup of soup. Stir in uncooked rice, onion, parsley, salt and pepper. Add beef and mix well (if dry add a little ketchup). Shape into balls and place in a skillet. Mix remaining soup with Worcestershire sauce and 1/2 cup water. Pour over meatballs. Bring to boil, reduce heat, cover and simmer for 35-40 minutes. Stir often.
Corn Bread
eat with chili or with warmed applesauce with cinnamon sugar
1 cup yellow corn meal
1 cup flour
4 T sugar
1 T baking powder
1 t salt
2/3 cup shortening
1 egg
1 cup soymilk
Preheat oven to 400 degrees. Combine dry ingredients in a bowl and mix well. Cut in the shortening until well blended. Beat egg and soymilk together. Mix dry ingredients until just blended. Pour into a well greased 8" square pan. Bake for 25-30 minutes, or until done.
P.F. Chang's Lettuce Wraps
3 T olive oil
2 diced chicken breasts/1 extra firm tofu, dried and diced (P.F. Chang's uses tofu, I like to double the recipe and use both)
1 cup waterchestnuts
2/3 cup mushrooms
3 T green onion
1 t minced garlic
cucumbers and peanuts optional
Saute chicken/tofu in oil over med high heat. Add remaining ingredients. Mix 2 T soysauce, 2 T brown sugar, 1/2 t rice vinegar then combine with stirfry.
Serve in lettuce with Special Sauce:
1/8 cup sugar
1/4 cup water
1 T soysauce
1 T rice vinegar
1 T ketchup
1/2 T lemon juice
Dissolve sugar in water then add, mix and refrigerate.
To serve, dish stirfry into lettuce wraps top with special sauce, spicy mustard and chili paste.
Tuna on Toast
3 T safe margarine or oil
3 T flour
1 1/2 cups chicken stock
1 can drained tuna
salt, pepper
Safe bread, toasted
Melt margarine/oil in skillet and combine with flour. Cook out flour flavor and add salt pepper to taste. Add stock, stirring constantly over low heat until sauce is thick, smooth and bubbly. Add tuna and heat until warm. Serve over warm toast.
Quiche
1 box Stove Top (check to make sure it's safe!)
cooked chicken, peas, carrots, broccoli, anything you like in a quiche
4 eggs
1 cup soymilk
Cook stuffing mix with required water (don't add butter unless it's safe!). Press into bottom of pie plate and bake 10 minutes. Add desired quiche toppings. Beat eggs with soymilk and pour over quiche. Bake at 350 degrees for 30 minutes until golden brown and cooked through
